How to identify whether preservatives are added to quick-frozen mixed vegetables? What are the specifications of quick-frozen mixed vegetables?

times

Quick-frozen mixed vegetables (such as green beans, corn, diced carrots, etc.) usually do not need to add preservatives, but whether they contain them needs to be identified through the ingredient list and process judgment. The following is a detailed analysis and identification method, and the specifications of quick-frozen mixed vegetables:

Quick frozen mixed vegetable specifications

1. Why may no preservatives be added to quick-frozen mixed vegetables?

Low temperature inhibits microbial growth

Quick freezing technology quickly freezes the food at temperatures below -18°C, causing the moisture in the food cells to form fine ice crystals, directly inhibiting the reproduction of microorganisms such as bacteria and mold. The national standard "Quick-frozen Noodles and Rice Products" (GB 19295) clearly stipulates that the addition of chemical preservatives such as benzoic acid is not allowed in quick-frozen foods.

Pretreatment process replaces anti-corrosion requirements

Mixed vegetables are usually washed and blanched (blanched) before being quick-frozen:

Blanching can inactivate enzymes in vegetables and prevent oxidative browning and nutrient loss;

Cleaning can remove surface impurities and some microorganisms, further reducing the need for anti-corrosion.

2. Under what circumstances may preservatives be added?

Mixed dishes (with sauce or meat)

If the product contains sauces (such as curry sauces, salad dressings) or prepared meats (such as diced bacon), preservatives may need to be added. For example:

Potassium sorbate: Inhibits mold and yeast, commonly found in sauces;

Sodium dehydroacetate: It was once used in prepared meat products, but the new version of GB 2760 in 2025 has banned its use in categories such as prepared meat and fruit and vegetable juices.

Small workshops or illegal products

Some unregulated companies may illegally add preservatives to extend the shelf life or reduce costs. You need to purchase through formal channels and check the label.

3. Quickly identify whether it contains preservatives in 3 steps

1. Look at the ingredient list: directly identify the name of the preservative

Chemical preservatives: If the following ingredients appear in the ingredient list, it means the product contains preservatives:

✅ Potassium sorbate, sodium benzoate: commonly found in sauces and pickled vegetables;

✅Sodium dehydroacetate: Be careful, new regulations in 2025 have banned its use in categories such as prepared meats and fruit and vegetable juices;

✅ Sulfur dioxide and sulfites: may be used as color-protecting agents (such as for shrimp), and need to be labeled "containing sulfur dioxide".

Preservatives:

✅ Vitamin C (ascorbic acid), citric acid: highly safe, often used for color protection and antioxidant;

✅Nisin (Nisin): biological preservative, commonly found in dairy products and some meat products.

2. Check the product type: Single ingredient is safer

Pure vegetable mixed dishes: the ingredient list usually only has "green beans, corn, carrots", no additives;

Compound products: For example, "Kung Pao Chicken Mix" (with sauce) may contain stabilizers (xanthan gum) and flavor enhancers (MSG), but may not contain preservatives. Please refer to the ingredient list for details.

3. Verify the certification mark: give priority to compliant products

Green food, organic certification: strict restrictions on the use of additives, usually no chemical preservatives;

Zero-added label: Some products are labeled "no preservatives", and you need to confirm whether there is a third-party testing report to support it;

Implementation standard number: Check whether the product implementation standard is GB 19295 (quick-frozen flour and rice products) or GB/T 29002 (quick-frozen vegetables). The use of additives in compliant products is more standardized.

4. Special circumstances: Color protectant ≠ preservative

Sulfite: It may be used to protect the color of shrimps, potatoes and other food ingredients. It is labeled as "sodium metabisulfite, sodium sulfite". It is necessary to pay attention to whether the residual amount meets the national standards (such as quick-frozen shrimp ≤0.1g/kg);

Ascorbic acid (vitamin C): Commonly found in mixed vegetables, it is used to prevent oxidative browning and is a safe antioxidant.

5. Suggestions on purchasing and storage

Give priority to large packages and small portions: avoid repeated thawing that may lead to the growth of microorganisms and reduce reliance on preservatives;

Observe the packaging status: if there is bulging bag, air leakage or severe frosting, it may have deteriorated and should not be eaten even if there is no preservative;

Heating thoroughly before cooking: Regardless of whether it contains preservatives or not, quick-frozen mixed dishes need to be fully heated to a core temperature of above 70°C to kill potential microorganisms.

Summary

Quick-frozen mixed dishes usually do not require preservatives, and regular products can be stored for a long time through low temperature and pre-treatment processes. When identifying, look at the ingredient list. If ingredients such as "potassium sorbate, sodium benzoate" are marked, it contains preservatives; if the ingredient list only contains vegetables and has certifications such as "green food", you can buy it with confidence. For compound products, it is necessary to make a comprehensive judgment based on process and labeling to avoid products that are overly dependent on additives.
